Here is a simple recipe for preparing thyme pastries with olive oil:

- 2 cups of flour
- 1 teaspoon dry yeast
- 1/2 teaspoon salt
- 1/4 cup olive oil
- About 1 cup of warm water
- 3 tablespoons dry thyme
- Additional olive oil for brushing
- Extra salt (optional)
How to prepare:
1. In a large bowl, mix the flour with salt and dry yeast.
2. Add olive oil and mix well.
3. Gradually add warm water and mix the ingredients gently with your hands until a homogeneous dough is formed.
4. Knead the dough for 5-7 minutes until it becomes smooth and elastic.
5. Place the dough in a bowl greased with a little olive oil, then cover it and leave it to rest for 1-2 hours until it doubles in size.
6. After the dough has doubled, divide it into small balls.

9. Fold the outer edges of the dough to form edges.
